Every year, 4th of July for my family meant hanging out by the barbeque and discussing different toppings for grilled corn (how long does corn last?) on the cob. My mum and I always agreed that barbeque sauce was the best ever topping. My dad was team pesto, and my sister – initially a pestoer – switched to siracha a few years ago. But passionate as our discussions were, we’d always end up eating simple grilled corn on the cob, slathered generously with salted butter. This was because, the idea of making different toppings for everyone seemed too exhausting, especially for the 4th of July.

But this year, I’m going the extra mile and making grilled corn on the cob 4 ways, because the 4th of July 2021, ought to be a little extra special. Last year, this day, most of us were cradled in our homes, away from friends and family, watching fireworks on the television. This year, being able to safely gather together again, calls for a double celebration. So, fire up your grills, munch on moreish delicacies in between lawn games and fireworks, and celebrate togetherness, in all its different flavors.

Making Grilled Corn on the Cob 4 Ways

Grill the Corn

Preheat the grill to high heat. Shuck corn cobs to remove all the husk and silk. Then place them on the heated grill and cook them for 10 to 15 minutes. While cooking, turn the cobs every 2 minutes to make sure they're evenly cooked. Brush them generously with butter and season with salt. Cook them until there are even specs of dark charred marks all over the corn.

Spice Up Grilled Corn on the Cob

Once grilled, remove and place the corn cobs on a plate. For Feta and Chili Corn, brush one to two tbsp of butter on a corn cob. Crumble some feta on top and drizzle some dry red chili flakes. For Spicy Siracha and Chives (how long do chives last?) Grilled Corn, spread sriracha generously on grilled corn and top off with finely chopped chives. To make Pesto Cheddar Grilled Corn, spread pesto on grilled corn and top off with some shredded cheddar. Spice up the last corn cob with some BBQ sauce and top it off with creamy cheddar (optional).

Ingredients

  • 4 ears corn, shucked
  • Butter, for serving
  • Kosher salt

Instructions

  1. Preheat grill for 10 minutes on high. (Alternatively, preheat grill pan to high.) Place and cook corn, turning often, until charred all over, about 10 minutes.
  2. Spread butter over warm corn and sprinkle with salt or chosen seasoning.
