Homemade fudge is sweet, rich, and the perfect homemade gift for someone with a sweet tooth. Remember while this recipe may say rocky-road fudge, it's also a basic walkthrough on how to make regular chocolate fudge that you can customize however you want.

Step 1 is to gather all your ingredients:

You can feel free to use 100% milk chocolate or 100% semi-sweet depending on how sweet or bitter you like it, but I find a 1:1 ratio creates a perfect balance for most people's tastes. Condensed milk also adds to the sweetness of the fudge so take that into account.

Salt gives the fudge a really nice bite and. I use vanilla extract a lot when I make fudge, but feel free to leave it out if you're not a fan of vanilla. Coffee enhances the chocolate and richness of the fudge. It doesn't leave any coffee flavor in the fudge whatsoever.

Again, as mentioned before, you don't have to add the rocky road filling you can just make plain fudge. If you plan on making more fudge in the future you can really get creative with what extras you use. From chopped nuts to fresh or dried fruit (how long does dried fruit last?) to other types of candy, the sky's the limit.

Speaking of bite another way you can really enhance the flavor of the fudge is to add something like whiskey or brandy or any delicious liqueurs you like to drink. Try adding fruit or nut liqueurs like amaretto. For Christmas try something seasonal like peppermint liqueur. If you have kids you can use things like almond or peppermint extract (how long does peppermint extract last?) instead of alcohol.

Step 2 is to melt the chocolate. Do it slowly and gently to avoid burning it. Have a rubber spatula handy so you can scrape the bottom of the saucepan without any fuss. Use a good quality saucepan too with a heavy bottom. Cheaper pans have thin bottom and thin walls which scorch your chocolate much easier. Invest in good pots and pans.

Melt all the chocolate with the condensed milk until the chocolate is mostly melted but not completely. The residual heat will keep melting the chocolate even after you've removed it from the heat. Keep string and folding once it's off the heat then mix in the coffee, salt, vanilla, and any other extras you may want to add, in this case, marshmallows (how long do marshmallows last?) and chopped walnuts (how long do walnuts last?).

Lastly, pour the fudge into a square or rectangular dish lined with parchment paper. Line the dish by very lightly greasing it with butter, then sticking the square of parchment paper onto it. I recommend you do this step before you do anything else because it'll be a lot of pressure to line the dish with paper while the chocolate melts or sets. Use the spatula to even out the surface of the fudge then place it into the fridge for a couple of hours to set.

I always prefer buying a baking pan and parchment paper online because of the added convenience!

After the fudge has set, turn it out onto a chopping board, and peel off the parchment paper. You can make a really simple garnish by melting a little bit of white chocolate in the microwave then use a dessert spoon to drizzle it over the fudge.

Use a sharp knife to cut the fudge into little cubes. If you're transporting the fudge you can make a little wrapper for the fudge cubes using little squares of parchment paper and wrapping them in that.

Ingredients

  • 340g/2 cups milk chocolate chunks
  • 340g/2 cups semi-sweet chocolate chunks
  • 800g/2 cans of condensed milk
  • 1 tsp espresso powder
  • 1 tsp sea salt
  • 1-2 tsp Vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chopped nuts
  • 1 small bar of white chocolate to garnish

Instructions

  1. Before you start, grease a 9x9 square pan very lightly with butter then line with parchment paper.
  2. Place the chocolate chunks and condensed milk into a saucepan with a thick bottom and place over a low flame. Gently melt the chocolate string and folding constantly with a rubber spatula.
  3. Once the chocolate is almost completely melted remove from the heat and keep stirring/folding. The residual heat will finish melting the chocolate.
  4. Fold the salt and vanilla extract into the chocolate followed by the marshmallows and chopped nuts.
  5. Scrape the fudge into the square pan then place into the fridge for a couple of hours to let it set fully.
  6. Remove the fudge from the square pan then use a sharp knife to cut it into small, even cubes.
