Green beans are a very common thanksgiving side and can be bought year-round. They can be bought fresh, frozen, or canned and can be cooked in a number of ways from steaming and blanching down to sauteing and roasting. These sautéed green beans are as delicious as they are easy and will get plenty of approval around the table.
Wash the Beans
Prepare green beans by washing them and removing the ends. Heat some olive oil and melt butter in a frying pan with a lid. Then add the green beans and give them a sautee for 2-3 minutes. Add a couple of tablespoons of water and lemon juice then close the lid and let them steam for a couple more minutes.

Steam the Beans
Finished green beans should tender but retain a little bit of crunch. Steaming them between 3 and 4 minutes should give that result. Once steamed set the beans aside and slice up your garlic, shallots, and bacon (how long does bacon last?). After all the water had evaporated there should be enough oil left in the pan to sautee the garlic and shallots. Avoid adding any extra fat because the fat off the bacon will also render in the hot pan.
Add the Bacon
Once the bacon is cooked to your liking toss in the green beans and season with some black pepper. Bacon should have plenty of salty so you don't want to add any more unless it tastes a little bland.

- Place a frying pan (with a lid) onto a high flame and heat some olive oil.
- Sautee the green beans for 3-4 minutes then pour in the water and lemon juice. Close the lid, turn down the heat and steam the green beans for another 4-5 minutes then set aside.
- Place the pan back onto the heat and add the garlic and shallots.
- Shortly after add the bacon and fry until crispy.
- Serve hot and optionally with some sour cream.
