Scrambled eggs are so easy to make perfectly once you have the hang of it. People tend to be very picky about scrambled eggs and it only takes a split second to overcook, but don't be intimidated. Ingredients are important. The fresher they are the nicer they will turn out.  2 large eggs, salted butter (how long does butter last?), salt, and freshly cracked pepper is all you need, but adding some form of soft dairy can take the eggs far, I'm using mascarpone cheese.

Eggs

Feel free to use any kind of eggs you like, I used duck eggs. They're not just always exceptionally large, but they have a nice color and great texture. They can have an interesting blue tint and are up to 50% larger than the average chicken egg.

A downside is that their shell is slightly thicker and the membrane on the inside is harder to break, so cracking them is a little tougher. Remember to always crack your eggs on a flat surface , when you crack on an edge or corner you risk shooting pieces of shell into the egg, and in case your not scrambling, breaking the yolk.

Cheese & Dairy

Adding soft dairy takes the eggs to new heights. It adds smoother texture, richness, and flavor. Experiment with the dairy you use. Crème fraîche, sour cream, buttermilk, cream, cottage cheese (how long does cottage cheese last?) are some places to start.

Dairy can quickly overpower the eggs, however, especially when you're using something like mascarpone, which is what we're using in this recipe. The texture can be heavily affected. Personally, when it comes to butter, I like using raw cow's butter, but again experimenting with things like goat's butter can really boost and improve your own recipe.

Herbs & Spices

Herbs are another great way to enhance eggs, and when you scramble them there's a ton of ways you can incorporate them, but for now, we're just going to stick with garnishing them.

Coriander, basil, tarragon and chives (how long do chives last?) all go exceptionally well with eggs. Using herb products like tarragon vinegar can add these aromatic flavors.

  1. Crack your eggs into a bowl and use a whisk or a fork to blend the eggs. Add the salt, mix again then set aside for as long as it takes you to prepare. Salt has an effect on the protein of the egg, so leaving it for up to 15 minutes can result in a better texture, despite popular belief.
  2. Place a skillet over medium-low heat and bring the butter to a bubble. Make sure not to toast or burn the butter or it will give the eggs an off-color.
  3. Season the eggs with pepper right before you pour them into the skillet.
  4. As soon as you pour the eggs in, use a whisk or a rubber spatula to stir the eggs.
  5. Cook the eggs for around 1 minute on the heat then take it off while continuously stirring it.
  6. Add the mascarpone cheese. Using sour cream, Crème fraîche, or other soft dairy products work well in the eggs, so don't feel restricted.
  7. Mix in the mascarpone until it is completely combined then place the skillet back onto low heat.
  8. Cook the eggs for another minute or so on the stove. The key is to take them off while they're still slightly undercooked because their residual heat will continue to cook them until they're the perfect doneness.
