Sea bass is a sweet, delicate fish that live in the wild for around 75+ years and grow up to be a couple of centimeters and weigh a couple of grams, up to around 6 feet weighing more than 500 pounds when they reach maturity. Seabass can be found in both the Gulf of Mexico and the east coast and can be caught pretty much year-round, though they're best in the late months of winter and early months of spring.

Sea bass is sweet, delicate, salty, and delicious. Whole baked sea bass is twice and good and super easy to stuff, roast, and eat.

- Preheat your oven to 400ºF.
- Place the scaled and eviscerated fish onto a chopping board and lightly score each side 3-4 times.
- Brush the fish with a combination of olive oil and cayenne pepper then brush over the fish before seasoning it with coarse salt and freshly cracked pepper.
- Stuff the fish with lemon slices and fresh herbs, place it onto a baking tray lined with parchment paper, then bake in the oven uncovered for 20-25 minutes or until the internal temperature reads 145°F.
- Remove the fish from the oven, cover it with a plate or some foil, and let it rest for 5-10 minutes before serving with fresh lemon wedges.
