Farm to Table Talk: Bringing Important Questions to the Table

Farmer's Market Culture

The rustic tone of the Farm to Table Talk podcast offers insightful ideas as it aims to explore issues within the agriculture industry. Most Americans today yearn for more information on how their food is produced, processed and marketed. ā€œFood cultureā€ draws travelers from all around the world to certain areas, and makes up a large portion of many community cultures and traditions. The story of a place has to include the story of its food: what was grown and what previous generations ate. This is why traditional food and cooking strategies are so important, and why weā€™re all making our way back to our traditional roots.

Traditional Cooking Meets Technology

In one Farm To Table Talk episode, host Rodger Wasson interviews Rob Connoly, owner and chef of Bulrush Restaurant in St. Louis.  This chef is finding a delicious way to share the story of special food traditions from the Ozarks. Rob is establishing the Ozark foodway by resurrecting ingredients, practices and recipes of the past. Heā€™s doing so through foraging, hunting, farming and creating extensive partnerships with local organizations. Guests who dine at his restaurant have an opportunity to try ā€œtraditionalā€ cuisine often from before the Civil War with ingredients such as paw paws, cattails and acorns!  The best of new technologies is brought into play, video stories of each course are presented through QR code links. Can we Feed the World?

Earlier this year, I was a server at a local italian restaurant that prided itself on using traditional forms of cooking. Fresh homemade pasta, sauces cooked to order, and specialty dishes that Chef Sesto Ramadori cooked for local guests but could only be found in Italy. As the pandemic progressed, I watched this small business transform. We had to be innovative with our solutions and offer new strategies to get business. Chef Sesto created online ordering, more virtual marketing, and we even talked about starting a recipe book with family recipes or online cooking classes.
