What defines the perfect pizza for you? Is it the pliable doughy crust? Or the sauce, impeccably balanced with herby flavors? Or is it the toppings that make or break this delicacy? For us at TexasRealFood, it is all of the above.
Crust, sauce, cheese, and toppings—do right by these four components, and you will always end up with an exquisite pizza.
Serving up some such perfect pizzas is Fredericksburg, TX-based food truck brand, Prometheus Pizza. Founded by husband-and-wife duo Christopher and Rachel, Prometheus Pizza was launched in January of 2020 with the aim of providing Fredericksburg with tasty food, a fun, relaxed atmosphere, and excellent hospitality.
So, what is it about this pizza place that sets it apart from the dozens of others we see today? “We source our raw materials from local farms and brands. So, only the freshest and best tasting ingredients we find go into our pizzas,” says Rachel.
“The dough, the highlight of our pizza, is made with 100% Barton Springs Mill flour. Our red pizza sauce is made from Bianco DiNapoli organic tomatoes. The produce comes from our very dear friends at Hat & Heart Farm and Kena Farms. The cheese you find so perfectly stringy and gooey is all thanks to Veldhuizen Cheese Shop in Dublin. Meats are sourced from the sustainable and regenerative Roam Ranch and our meat supplier Force of Nature. Not to forget, we are able to get beautifully cured meats, salami, prosciutto, et al, from La Quercia and The Salumeria.
Their menu includes red pizzas such as the classic Pepperoni and Margherita. But, if you want something unique and creative, you should try their Roxanne variety which features kale, sausage, and Calabrian chili. If you’re in the mood for something creamy, their white pizzas showcase an irresistible ricotta cream. Galatea, Hot Potato, and Hey Bob! are the way to go. They also have some locally sourced snacks such as their Quick Pickles and Marinated Olives. And of course, you can’t forget the Caesar Salad in case you have a hankering for a great non-pizza dish. Open for dine-in, pick-up, and delivery, Prometheus Pizza is everything you want from a local Texas pizzeria.
A unique initiative taken up by this brand is the Prometheus Racquet and Run Club 2020. This club encourages and organizes informal runs and tennis games to bring the community together. All participants are encouraged to donate a fixed amount to the Fredericksburg Food Pantry and the Hill Country Community Needs Council.
