Happy Easter y’all!
Easter may be looking a tad bit different this year, but that doesn’t mean we are running any less on the festive spirit and cheer! God knows we need some cheering up!
Downsizing seems to be the name of the game this time around. While inviting 20 extended family members and friends over for an extensive Easter dinner spread may not be possible, there are plenty of recipes out there that you can whip up at short notice for your immediate family. I have put together few simple but festive dishes you can enjoy with your family on Easter while staying safe at home.
Easy Easter Breakfast Quiche
What you will need:
Unbaked 9-inch pie shell-1
Butter (how long does butter last?)-2 tablespoons
Bacon or ham or vegetables, chopped – 1 cup
Onion, chopped - 1
Grated cheese (whichever kind you may have at hand)- 1 cup
Eggs-4
Cream (how long does cream last?)-1 cup
Milk-1 cup
Nutmeg (how long does nutmeg last?), Salt and Pepper
Herbs mix, which ever you have at hand
What you need to do:
Heat the butter and stir fry the onions till they turn golden. Set them aside. Place the cheese in the pie shell and cover it with the meat or vegetables. Sprinkle the fried onion on top.
Beat the eggs, cream and milk briskly, and add the seasonings. Pour this over the pie shell mix and bake for close to 45 minutes at 400 degrees F for close to ten minutes. Bake for another 40 minutes at 350 degrees till the custard is cooked and the quiche (What wine goes well with quiche?) turns golden. Serve once slightly cooled.
Easter Herb Crusted Beef Tenderloin
What you will need:
1 4-5 pounds beef tenderloin (What wine goes well with beef tenderloin?) roast
Mixed peppercorns, cracked-2 teaspoons
Dried basil (how long does dried basil last?) leaves-1 teaspoon
Garlic minced-2 teaspoons
Dried oregano (how long does dried oregano last?) leaves-1 teaspoon
What you will have to do:
Preheat oven to 425 degrees. Get the seasonings together and cover evenly over the beef roast surface. Place the roast on a rack in a shallow roasting pan. Insert an ovenproof meat thermometer such that the tip is in the thickest part of the beef. Roast it at 425 degrees for about 45 minutes for medium rare. Continue for about 60 minutes for medium doneness. For medium rare, your meat thermometer should show a temperature of 135 degrees. Place the roast on a carving board and let it stand for 15 to 20 minutes. Carve the roast into thick slices and serve with roasted vegetables. (What wine goes well with roasted vegetables?)
Easy Easter Healthy Brownies
What you will need:
Canned black beans (how long do canned black beans last?) -1 Cup
Canola oil -half Cup
Eggs -2
Instant espresso -1 teaspoon
Hershey's special dark unsweetened cocoa powder -1/2 Cup
Chocolate chips -1/4 Cup
Maple syrup (how long does maple syrup last?) - 2/3 Cup
Vanilla extract -1 ½ teaspoons
Whole wheat flour (how long does whole wheat flour last?) -1/3 Cup
Baking powder (how long does baking powder last?) -half teaspoon
Chopped walnuts -1/2 cup
Salt -half teaspoon
Nonstick cooking spray
What you will have to do:
Preheat the oven to 350 degrees. Spray some nonstick cooking spray on a 9 by 9-inch square baking pan. Using a food processor, puree the black beans with the canola oil. Add to this mixture, eggs, maple syrup, espresso, vanilla and the special dark cocoa. Melt the chocolate chips (how long do chocolate chips last?) and add it to the mixture. Finally, blend this on medium till it is smooth.
In a bowl, whisk the flour (how long does flour last?), salt and baking powder. Add this to the blended wet mixture and fold it in until it is just incorporated. Pour the batter into the baking pan and sprinkle the chopped walnuts (how long do walnuts last?) on top. Bake at 350 degrees until the surface is done around the edges. For a fudgy center, stick with this temp for 20 – 25 minutes.
Now, this could be the toughest part, but let the brownies cool before you cut into them and remove them from the pan! Here's wishing us all a wonderful week!
