Beef Enchiladas with Homemade Sauce

Ingredients

  • ¼ cup of vegetable oil
  • ¼ cup of flour
  • 3 cups of chicken broth
  • 15 ounces of tomato passata, make sure it's just plain passata
  • ¼ cup of chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 1 lb ground beef
  • 1 ½ cups shredded cheese
  • 6 corn or flour tortillas

Instructions

  1. First to make the enchilada sauce, make a roux. Heat the vegetable oil in a saucepan and add the flour then whisk until combined. Cook for 2-3 minutes to toast the flour giving a nutty aroma.
  2. Add the chicken broth little at a time until the roux is completely incorporated.
  3. Add the passata and all the herbs & spices. Whisk to combine well.
  4. Turn the heat down and let the sauce simmer for 5-10 minutes.
  5. Meanwhile in a separate skillet heat 2 tablespoons of olive oil. Add minced chili, garlic and diced onion.
  6. Add the mice and season with salt & pepper. Cook until cooked through
  7. Add half of the sauce to the beef, combine well.
  8. Wrap around ½ cup of the meat in a tortilla then lay in into an ovenproof tray. Top with the remaining enchilada sauce and cheese.
  9. Bake at 375°F for 20-25 minutes. Let stand 5 minutes before serving.
