Frito Pie is a classic easy, quick-fix dinner or snack recipe. And while those tales are dinner table legends, there’s something oddly rewarding about making a quick fix dinner, in the privacy of your little kitchen. Tales of these dinners just bubble around the stove and never leave the kitchen. But on a cold, Tuesday night, post a long day of work, quick-fix dinners, like Frito pie is what you reach out for. They’re unfussy, hearty, warm, and inexpensive.

Frito pies are delicious, as they are versatile. Scout your pantry for available ingredients, pile them on top of Frito, sprinkle some grated cheese, and you’re good to go. And don’t bother picking out a serving plate, because Frito pies taste best, straight from the bag. This is a classic version of Frito pie with crispy corn chips (how long do corn chips last?), topped off with spicy beef (how long does beef last?) chili, onion, cheese, and sour cream. It is meaty, crunchy, indulgently unhealthy, and totally worth it.

Making Frito Pie

Heat olive oil in a skillet over medium-high heat. Add garlic and onion, and saute for a few minutes till the onions are soft and turn translucent. Then add minced beef and cook for 6 to 8 minutes, till beef loses its raw pinkness. Add tomato paste (how long does tomato paste last?) and chopped tomatoes and mix well. Season the mix with oregano, cumin powder, cayenne, salt, and pepper. Cook for 5 to 6 minutes till tomatoes are tender and begin to release their water. Stir in boiled beans. Mix well and cook for 5 to 6 minutes till the mixture is thick and well combined.

To assemble Frito pie, open the bag from the centre, by cutting across the middle horizontally, leaving about a 1-inch distance at the top and bottom.

A classic straight-out-of-the-bag Frito pie with crispy corn chips, topped off with spicy beef chili, onion, cheese, and sour cream.

Ingredients

Spicy Beef Chili
  • 1 tbsp extra-virgin olive oil
  • 1 medium white onion, chopped and divided
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 lb ground beef
  • 1 1/2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • Kosher salt
  • Freshly ground black pepper
  • 28 oz can crushed tomatoes
  • 15 oz can pinto beans, drained and rinsed
  • 4 oz can green chili
For serving
  • 6 (1-oz) bags Fritos
  • 1 jalapeño, thinly sliced
  • 2 cups shredded Cheddar
  • Sour cream, for serving (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Add half the onion and cook until soft and translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Stir in tomato paste. Add ground beef and cook until browned. Drain fat and return to heat.
  2. Add the spices (chili powder, cumin, oregano, cayenne) and season generously with salt and pepper. Pour in crushed tomatoes, pinto beans, and green chili. Bring chili to a boil. Reduce heat and simmer 20 minutes. Season with more salt and pepper, to taste.
  3. Build Frito pie. Open bag(s) and add chili. Top with cheddar, remaining chopped white onions, jalapeños, and sour cream.
