These mini Caprese salad bites, pack those gorgeous Caprese flavors into bite-sized appetizers. A breeze to make, these no-cook appetizers are sure to be a hit at any summer luncheon.

Ingredients

  • 1 cup balsamic vinegar
  • 2 cups bocconcini cheese
  • 2 cups cherry tomatoes
  • 1 bunch basil fresh
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste

Instructions

  1. Make Balsamic Glaze - Cook down balsamic vinegar until reduced to half, may take around 15 to 20 minutes. .
  2. Assemble - Take a toothpick or a fancy stick, stick a piece of cheese, a basil leaf and a cherry tomato onto it. Repeat with remaining ingredients until everything is skewered
  3. Season - Season with salt and pepper to taste.
  4. Finish & Serve - Using a teaspoon drizzle some of the balsamic reduction onto each stick.

Notes

You can store leftovers in the fridge for up to 5 days (check after 3)

For the excess glaze, you can store it in a bottle for up to one month
