Homemade Bourbon Pecan Ice Cream

Homemade Bourbon Pecan Ice Cream

Prep time: 15 MinCook time: 7 MinInactive time: 24 HourTotal time: 24 H & 22 M
With a creamy base infused with the warmth of bourbon and studded with toasted pecan pieces, this bourbon pecan homemade ice cream is a delightful indulgence.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract
  • 1 cup toasted Texas pecans, roughly chopped

Instructions

  1. In a medium saucepan, combine the heavy cream and whole milk over medium heat. Heat the mixture until it just begins to simmer, then remove it from the heat.
  2. In a separate bowl, whisk together the granulated sugar, egg yolks, and salt until well combined.
  3. Slowly pour about half of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the yolks. This prevents them from curdling.
  4. Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture, whisking continuously.
  5. Place the saucepan back on the stove over medium-low heat. Cook the mixture, stirring constantly with a wooden spoon or spatula, until it thickens slightly and coats the back of the spoon. This should take about 5-7 minutes. Be careful not to let it boil.
  6. Once thickened, remove the saucepan from the heat. Stir in the bourbon and vanilla extract until well combined.
  7. Pour the mixture through a fine-mesh sieve into a clean bowl to remove any lumps or cooked egg bits.
  8. Cover the bowl with plastic wrap, ensuring it touches the surface of the custard to prevent a skin from forming. Chill the custard in the refrigerator for at least 4 hours or overnight until completely cooled.
  9. Once the custard is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions. This typically takes about 20-30 minutes.
  10. During the last few minutes of churning, add the toasted pecans to the ice cream maker, allowing them to mix evenly throughout the ice cream.
  11. Transfer the churned ice cream into an airtight container, gently folding in any remaining pecan pieces. Press a piece of plastic wrap onto the surface of the ice cream to prevent ice crystals from forming. Seal the container and freeze for at least 4 hours or until firm.
  12. When ready to serve, scoop the bourbon pecan homemade ice cream into bowls or cones and enjoy!
