I was drinking Texas craft Pina Colada and vodka-spiked orange juice the other weekend. The tropical flavors of pineapple and coconut rum transported me into a tropical paradise and, admittedly, I enjoyed myself. So much so that as I was trying to navigate from my friend’s porch to the Uber I booked 15 feet away, visions of fruity tropical cocktails kept flashing in my head. 

Good times and good booze. Clearly, I may have enjoyed myself a bit too much that weekend but the fruity tropical flavors stuck with me all week. This drove me to obsess with the blend of flavors from pineapple, orange, and coconut into boozy drinks using Texas-distilled spirits. 

After diving into a rabbit hole of cocktail recipes utilizing these ingredients, I ran into the Texas Roadhouse, one of the most popular drinks at Texas Roadhouse throughout the state.

Cowboy Quencher where the name of the cocktail caught my attention because it’s such a mouthful. The Texas Roadhouse Cowgirl Quencher recipe is a playful blend of flavors from the artisanal Coconut Rum from Island Getaway, the medley of pineapple and orange juices, peach schnapps, and a dash of grenadine makes up for an exciting week-ender mix and one of the best Texas Roadhouse drinks.

The Rum

Island Getaway is a small-batch distillery out in Dripping Springs, Texas. They were first established with the main goal of making Texas-distilled rum that is both flavorful and versatile. That is why we’re using their Coconut Rum for our Texas Roadhouse Cowboy Quencher. 

Their rum is a wonderful blend of light rum and freshly distilled coconut extract. This offers drinkers a light coconut rum with bold flavors but without sugar. It finishes dry and clean with bold notes of coconut that smoothly transition to the taste. And because of these characteristics, it makes for a perfect rum that will blend well into our Texas Roadhouse Cowboy Quencher cocktail. Ingredients

  • 1 Oz. Island Getaway Coconut Rum

  • 1 Oz. Peach Schnapps

  • 3 Oz. Orange Juice

  • 3 Oz. Pineapple Juice

  • Grenadine

Directions

  1. In a chilled glass with ice, pour the Island Getaway Coconut Rum and peach schnapps.

  2. Pour the orange and pineapple juice into the glass.

  3. Finish with a dash of grenadine.

Now that temperatures around Texas are beginning to drop with each day that passes, it’s good to have this drink as a way to end a work-loaded week.
