Coleslaw is a dish that is enjoyed by many people. It is a simple dish to make and can be made with a variety of ingredients.

Ingredients

  • ¼ cup white vinegar
  • ¼ cup extra virgin olive oil
  • 2 tbsp. sugar
  • 3-4 tbsp. fresh lime juice
  • 1½ tsp. kosher salt
  • ½ tsp. ground coriander
  • ¼ tsp. ground cumin
  • ¼ tsp. ground cayenne
  • ¼ tsp. freshly ground black pepper
  • 2 cups thinly sliced red cabbage
  • 2 cups thinly sliced white cabbage
  • ½ cup shredded carrot
  • 1 medium thinly cut jalapeno, with seeds
  • ½ red bell pepper, thinly sliced
  • ½ yellow bell pepper, thinly sliced
  • ½ cup chopped, fresh cilantro

Instructions

  1. Whisk together the first 9 ingredients in a large bowl.
  2. Add the red cabbage, white cabbage, shredded carrot, jalapeno pepper, and the red and yellow peppers. Toss to coat.
  3. Chill for approximately 1 hour before serving, tossing occasionally.
  4. Stir in the chopped fresh cilantro just before serving.
