Well, I did say I love roasted vegetables and a hearty vegetable soup, so what better way to enjoy them both during cold weather by combining them into one tasty recipe!
Roasted Winter Vegetable Soup Ingredients
1 butternut squash (how long does butternut squash last?), peeled, seeded, and cubed
1 large sweet potato, peeled and cubed
1 large onion, chopped
3 cloves garlic, minced

1 cup milk
Salt and pepper to taste
Instructions:
Preheat oven to 375 degrees F.
