A veggie recipe doesn’t have to be complicated and something that requires a lot of work and preparations. In fact, it’s possible to make a great veggie meal that’s both healthy and eco-friendly with five or less ingredients. Here are a few simple veggie recipes that you could make on your own and that you probably won’t need to shop too much for and that you could shop for in your ordinary weekly errand or you just have the ingredients at home already.
Easy Baked Jalapeño Cheese Crisps
It’s the simplest dish on our list and it’s perfect for breakfast or for some other meal made to tie you over to the next lager dish. It can have between two and five ingredients.
Preheat oven to 375F. Line a rimmed half sheet pan with a silpat or parchment paper.
For small crackers, divide the cheese into 1 tablespoon mounds of cheese, leaving at least 3 inches between the mounds, adding 1 slice of jalapeño on top of each one.
For medium crackers, divide the cheese into 2 tablespoon mounds of cheese, leaving at least 3 inches between the mounds, adding 1 to 2 slices of jalapeño on top of each one.
For large crackers, divide the cheese into 3 tablespoon mounds of cheese, leaving at least 3 inches between the mounds, adding 1 to 2 slices of jalapeño on top of each one.
Bake for 8 to 15 minutes, or until the cheese has melted, bubbled, and turned a uniform deep golden brown. The oil will be bubbling around the cheese and the cracker will be set, but pliable. Remove the pan from the oven and let rest for 3 minutes before transferring the crisps to a paper towel lined plate to finish cooling and crisping up.
Store leftovers in an airtight container at room temperature. If they become stale, you can re-crisp them in a 375F oven for 3 minutes.
Slow-Cooker White Queso Dip
It’s one of those meals that everyone loves and that isn’t made enough because it sometimes feels that it’s too difficult to do so. In fact, if you have your own crockpot it takes only five ingredients to prepare the dip for a small group of friends.
In a medium pot over LOW heat, combine the cheese, cream cheese (how long does cream cheese last?), sour cream, and Rotel.
Let the mixture heat until the cheeses melt and a smooth cream forms, stirring often. This should take 15-20 minutes. Add the spices if desired. Add milk if needed.
Once melted, serve immediately, or transfer to a slow cooker with a “warm” setting to keep dip warm and melted. Enjoy!
Waffle Iron Hashbrowns
Hash browns are the simple recipe as it is but using a waffle iron to make it extra crispy and neat at the end is the stroke of genies. It cooks them on both sides at the same time making the whole process simpler and it will make them smooth on the inside and crispy on the outside.
Preheat waffle iron. If it has temperature controls, set it to medium.
Squeeze shredded potato with a towel until it’s as dry as possible.
In a mixing bowl, combine shredded potato, salt, and pepper.Using a silicone brush or paper towel, carefully grease both sides of waffle iron with butter.
Pile shredded potatoes into waffle iron, over-stuffing it a bit, and close lid. (The pressure of the lid will compress the potatoes and help them emerge as a cohesive, waffled unit.) Cook for 2 minutes, then press down on lid to further compress potatoes (be careful: lid may be hot).
Continue cooking potatoes for 5 minutes longer, and then begin checking them: they are ready when potatoes are golden brown all over, about 1 to 2 minutes longer. Serve hot with eggs or any other breakfast foods.
Wonton Mozzarella Sticks
Mozzarella sticks are a perfect dish for a late night snack or for a party with a variety of different dips for your guests to choose from. The whole meal is over in 10 minutes of work and has 3 ingredients all together.
Heat vegetable oil in a medium skillet to 325 degrees F.
In a small bowl, whisk together egg and 1 tablespoon water.
Working one at a time, brush wonton wrapper with egg wash; place string cheese in the center of each wrapper. Bring the bottom edge of the wrap tightly over the cheese, rolling from bottom to top until the top of the sheet is reached, being careful not to tear the wrapper. Repeat with remaining wrappers and string cheese.
Add string cheese to the skillet and cook until golden brown and crispy, about 1-2 minutes. Transfer to a paper towel-lined plate.
Serve immediately with marinara sauce (how long does marinara sauce last?), if desired.
