If there is one thing us Texans love as much as our traditional barbecues, itโ€™s Mexican food. (What wine goes well with Mexican food?) The love for Mexican food has been true and long lasting in Texas. From steamy filled tamales to spicy enchiladas and from chili to tacos, we love it all.

Mexican food came to the USA in the early 1900โ€™s, with Mexican migrants who traveled here to work.

They carried with them snacks or lunches to have on the go. Eventually, Mexican women started making a business out of it They opened stands where you got fresh, delicious homemade Mexican meals.

Well, thank god for the women of Mexico! Us, Americans with our palates could not have come up with these incredibly piquant and colorful foods. So, it was no surprise when the locals lapped up the exotic dishes and very soon, we were in our kitchens learning to recreate these gems at home for our families.

The Texas Taco may be a variation of the traditional Mexican one but in terms of taste, it is second to none. Inspired, we have redesigned tacos to give it our personal touch. Tacos are filling, quick, and fun to eat. You can make them as simple or complex as you desire and there are really a hundred different ways to make them.

Today, I am going to let you in to my family taco recipe. I love it and the kids love it. That is quite a miracle considering my children. It is a lively, tangy, soft shelled taco with rice (how long does rice last?), corn and some interesting things that are sure to tickle your taste buds.

You may choose to use store bought tortillas but I feel homemade tortillas can be very soft and mellow to eat. It may be just me, but I love making my food with my hands whenever I can.  The fresh flavor of homemade tortillas will take the tacos up a notch, so I am going to add a quick recipe for homemade tortillas.

What You Will Need:

  • 2 cups all-purpose flour

  • ยพ cup water

  • Half a teaspoon salt

  • 2 tablespoons oil

Method:

  1. Combine the flour, salt, oil and water and make a neat dough. Knead the dough on a floured surface till the dough is smooth.

  2. Let the dough rest for 15 minutes.

  3. Divide the dough into equal 8 portions.

  4. Roll each portion into a sevenish inch circular tortillas

  5. On a cast iron skillet cook the tortillas until slightly brown, a minute or so on each side.

Now that the tortillas are ready, it is time to start on the filling. My all-time favorite for tacos is ground beef. Minced meat is much simpler to bite on. Add to it a leafy green mix which will be far more nutritious than just some chopped iceberg. Of course, some diced tomatoes will add sweetness and tang. Rice to give the taco a fuller body and why wouldn't we finish it off with grated cheese on top? Tacos are so easy to prepare, you can have a whole taco bar set up in a matter of minutes!

Method Of Preparation:

  1. Cook the ground beef, onion and red pepper on medium to high heat till the beef is brown and the veggies are tender.

  2. Stir in the tomatoes, rice and taco seasoning and lime juice. Let it cook on low for 15 minutes until the beef is cooked. Add the kidney beans to the mix at the very end.

  3. Serve in tortillas, topped with a generous amount of leafy greens and lots of grated cheese.

  4. Enjoy!

Alternatively, you could use turkey meat, pulled pork or even chicken as the main protein in the taco. Add some diced avocados for that bite of creamy indulgence. Fresh chopped onions will add that crunch and freshness or add some pitted olives to get that fragrance in each bite.

A Taco is no longer limited to having only a certain amount of ingredients in it. It has taken the best out of both regions and emerge victorious as a revered food.  The USA is like a taco in reality where people of different ethnicity, religions, orientations and language come together to sing a song that is far sweeter if sung in harmony.
