But watching my 18-month-old squish a fresh peach right in front of me and all over herself, I decided. Something had to be done about the plentiful ripe summer \peaches sitting on my table.

Peach Pancakes

If it were up to my children, they would add everything and anything to pancake batter. You have to admit though, pancake batter does make life a breeze and makes pancake baking dish easy to make.

This recipe incorporates diced peach slices, so you get that burst of fruity flavor with each bite. They smell and taste much like fresh peach pie and are very easy to whip up even for people cooking for the first time (serve warm).

What You Will Need

Method

  1. In a medium bowl, whisk together the dry ingredients, i.e. flour, baking powder, cinnamon and salt. In another bowl, stir the Greek yogurt with the butter and vanilla extract.

  2. To the Greek yogurt mixture, add the flour mixture and the milk. Do this in a gradual process, alternating between adding flour and milk. Stir until it comes together and incorporated then gently fold in the peaches.

  3. Pre-heat a large cast iron skillet with some butter and pour a dollop of the pancake batter onto the hot pan. Let the pancake cook for a couple of minutes or until it starts turning golden along the edges before you flip it over.

  4. Serve with just the right amount of organic maple syrup or a homemade peach chutney (recipe given below). Or you can serve it with whipped cream and ice cream depending on your cravings.

Cooking Tips and Substitutes

Whole wheat flour can be substituted with all-purpose flour or white whole wheat flour. Any milk (i.e. Almond milk (how long does almond milk last?) may be substituted in place of regular milk. Make sure to finely dice the peaches so they do not interfere with the cooking of the pancakes.

Fresh Spicy Avocado and Peach Salad

What You Will Need

  • Two avocados, pitted and sliced

  • 3 ripe peaches, sliced

  • 1 tablespoon organic honey

  • 3 tablespoons olive oil

  1. Stir together, olive oil, lemon juice, honey, chopped shallot and chile in a bowl. Add the salt and pepper. Place the peaches in this mixture and let marinate for at least 30 minutes.

Turkey, Brie and Peach Grilled Tacos

  1. In a saucepan, combine all the ingredients and bring to a boil. Allow it to simmer on medium low for the next 20 to 25 minutes until the peaches are soft and cooked and the liquid is mostly absorbed. Once cooled, store the chutney in an airtight glass container, refrigerated until use.

To Assemble the Tacos, You Will Need:

  • 4 Tortillas, toasted

  • 12 slice roasted turkey breast

  • Hummus, 1 cup

  • 1 and half cups salads greens

  • Thinly sliced brie cheese

Method:

  1. Slather the hummus on the lightly browned toasted tortillas.

  2. Place turkey, brie cheese and salad greens next.
