  • 10 cups water

  • Salt and pepper, to taste

  • 12 corn tortillas, cut into quarters

  • 1 can diced tomatoes and green chilies (10 oz)

  • 1 can cream of chicken soup (10.5 oz)

  • 1 can cream of mushroom soup (10.5 oz)

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 2 teaspoons chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon cumin

  • 2 cups shredded cheddar cheese

Directions:

  1. Place the whole chicken, onion, celery, carrots, bay leaf, water, salt, and pepper in a large pot. Bring to a boil and reduce heat to low. Cover and simmer for 1 hour.

  2. Remove the chicken from the broth and let it cool. Once cooled, shred the chicken into bite-size pieces and set aside.
