As a child I would wake up every weekend, put on my little apron and take on the role of my dad’s sous chef. And the best part? My dad was never afraid to experiment in the kitchen! We’d try our hand at cooking everything, from rustic beef stews to delicate desserts. On the days that our experiment wouldn’t really work, we’d drive to our favorite pizza place and binge our hard work away. Over the years I realised that even though my dad wasn’t exactly a masterchef, these kitchen workshops instilled love and respect for the food we eat among all the siblings. Regardless of whether it was Father’s Day or not, cooking with my dad and eventually for him has always been a special part of my childhood and one that I immensely treasure.
So, this Father’s Day I decided to sort through all our old diaries and recover the recipes we’d try out in my childhood kitchen that were great hits with my dad. If you’re looking to whip up some delicious food with your dad or simply planning to surprise him with a fancy meal, here are some recipes that you should definitely try out.
Grilled Chicken & Peaches
Right off the bat, let’s get grilling! Dads and grills have an unspoken bond that’s almost sacred. Or was it only my dad who wouldn’t let any one else touch the grill? Whatever it may be, grilled chicken wings are easy to cook, yet highly satisfying to eat and will get your old man super happy. Also, all those beautiful peaches you see everywhere these days? This recipe puts them to great use.
Here’s what you need:
Ingredients
2 cups peach jam or preserve
3 tbsp olive oil
2 tbsp soy sauce (how long does soy sauce last?)
1 tbsp Dijon mustard
A tbsp chopped garlic
1 chopped jalapeno
Salt & pepper for seasoning
8 chicken breasts (What wine goes well with chicken breast?), frenched
4 ripe peaches, pitted and halved
Method
In a bowl, add the peach jam, olive oil, Dijon mustard, soy sauce, chopped jalapeno along with salt and pepper. Mix well and keep ½ cup aside.
Before getting to work on the chicken, pre-heat the grill. Use some olive oil and seasoning and brush it well on the chicken. Once your grill is hot, place the chicken with its skin down and cook for about 6-7 minutes. Flip it over and give it another 5 minutes on the other side.
Once both sides have turned golden, brush the peach marinade on the chicken. Continue cooking for another 5 minutes until the chicken is tender.
Once all your chicken is grilled, it’s time for the peaches. Place all the peach halves on the grill for a couple of minutes. Flip them over, and brush on the leftover peach glaze. The peaches should take about 4 minutes to cook to a soft texture.
Serve your grilled chicken with the glazed peach, some toasted pita bread and a side of fresh green salad.
Peach Puff Pancake
Is your dad the pancake pro? Give him the day off today and instead whip up this delicious recipe using seasonal produce and very little effort. Puff pancakes are great for a sweet mid-day snack or even as after-dinner dessert. You make the rules, let no one tell you that pancakes are only for breakfast! Also, in case you need to control the sugar in this one, go for it. The fruit does an excellent job of adding natural sweetness to the recipe anyway.
Ingredients
1 cup all-purpose flour (how long does flour last?)
1 and half cups milk
6 eggs
5 tbsp sugar
Two thirds stick of butter
½ tsp salt
2 tsp cinnamon
1 tsp vanilla extract
12 peaches, thinly sliced.
Method
Set the oven to pre-heat at 425 degrees.
In a deep baking tray, add butter and peach slices
Let the butter melt and bubble in the oven.
In a bowl, combine the eggs, milk, flour, sugar, vanilla, salt and cinnamon. Blend well.
Pour into the baking tray and sprinkle the top with some brown sugar.
Let the batter bake for 25 minutes or so, or until you can notice the puffing.
Remove from the oven, and serve hot with some fresh peach slices and a sauce of your choice.
